Yes you read that right – chickpeas! I’m always keen to sneak extra protein into a dish, and I was intrigued to experiment with chickpeas in a sweet context. I love black bean chocolate brownie, so it made sense that other legumes could translate well into a sweet treat. These little choc bombs are fudgy, soft, rich and not too sweet. Strawberry Macadamia Chia Parfait

The little patch in our garden is merrily flowering (which reminds me, I must put netting over them before the birds start eyeing them up) so today I started the day with a rosy glow, thanks to this strawberry macadamia chia parfait (with a lopsided but well-intended heart..!) This is a nutrient-dense & delicious blend, which is hearty enough to be breakfast. The chia & nuts give it protein power & density, and if you add coconut milk, the healthy fats will keep you satiated longer. It’s like a healthy strawberry thickshake with a bonus hit of vanilla chia pudding at the bottom….

These are light & creamy little cakes with a hint of sweetness. Smooth coconut milk & the lightness of brown rice flour & almond meal are a lovely complement to the crunch of toasted almonds. Super Simple Plum Tart

I impulse-bought a big box of organic omega plums – beautifully dark-fleshed with enough acidity in their speckled skins to make you shudder with tart delight.
