Cooling Minty Smoothie Bowl

To be honest, I’ve never really ‘got’ smoothie bowls. I’ve always been quite happy drinking my blends but when I made this deliciously thick almost mousse-like concotion, a straw just wasn’t going to cut it. Out came the spoon. And then, once faced with a pale green blank canvas, I simply had to decorate it… This is a refreshingly cool, creamy, minty blend.

150 g silken tofu (silken is best for its ultra-smooth consistency)

¼-1/2 an avocado

a good handful of fresh mint leaves

a few leaves of lemon balm (optional, but my garden’s overrun with the stuff…)

juice of half a lime

½ tsp baobab powder (optional, adds tang & an immune boost)

½ tsp spirulina powder

½ – 1 frozen banana

about ¾ cup coconut water

Blend until creamy smooth, pour into a bowl, then feel free to play with it! I decorated mine with banana coins, chunks of granny smith apple, berries, chia seeds, almond slices & some random flowers that my daughter poked in from her flower patch…
