Easiest Bliss Balls Ever

These really are the easiest bliss balls ever – you’ll easily memorise the recipe, since there are only three main ingredients: dried apricots, mixed nuts & a lemon. The combination of tartly sweet fruit, salty nuts & zingy citrus is truly wonderful.This recipe was a happy collision of leftovers – I was tidying out my kitchen cupboard when I found organic dried apricots and a bag of roasted nuts that needed eating. Into the food processor they went, along with a zesty lemon to cut through the sweet stickiness. Rolled in coconut, these bliss balls are fast to make, they store well in the fridge, and they’re lovely to give as homemade Xmas gifts.

1 cup dried apricots (organic if possible, to dodge all the sulphites)

1 cup mixed roasted nuts (salted is good, a great complement to the sweet apricot)

1 lemon, juice & zest

dessicated coconut for rolling

Put the apricots, nuts, lemon juice & zest into a food processor or high speed blender and blitz until a chunky sticky dough is formed. Use damp hands to form into balls & roll in dessicated coconut. Store in the fridge.
