Minty Applicious Smoothie

Spinach, cucumber & celery are all wonderfully alkaline vegetables, making this a cooling, soothing, low-fructose drink. The real flavour punch comes from the tart green apple, the zesty lime and the sweet tang of mint.

I have a freezer stash of leftover kitchen scraps – some remnants end up in stock, some end up in smoothies. For the smoothie above, I used frozen pieces of apple plus a stray chunk of frozen banana, which ended up giving me a frosty creamy smoothie – thick & perfect for a coconut bowl! On top, there are pomegranate arils, pumpkin seeds, chopped pistachio, and a sprinkling of dessicated coconut.

½ granny smith apple, seeds & core removed

1 large handful of spinach

1 chunk of cucumber (about as long as your thumb)

1 chunk of celery, same as above

¼-1/2 small lime *

sprinkle of cashews

2/3 cup coconut water

2-3 fresh mint leaves

* if it’s organic, you could keep the skin on for extra kick. Use lemon if you’ve got no lime.

Throw everything into your blender or bullet and whiz away until smooth! Depending on how fierce your blender is, you may want to chop the apple and veges into smaller pieces before blitzing them.
