Black Bean Choco Peanut Butter Smoothie

Black beans! I know, right? Not the most intuitive addition to a smoothie, but a great one. It adds thickness & richness – and of course, a good plant protein punch. Don’t worry, the other flavours shine through & mask any overly bean-y flavour.

I took a photo of my smoothie then realised I’d forgotten to add my favourite stainless steel straw, but when I stuck the lovely thick straw in…slosh…unexpected chocolate puddle. It made me laugh out loud, but since I’m all about keeping it real, I decided to post the overflowing drippy leaky version instead of the pre-straw prettiness. Flooded or not, this was seriously yum! I was craving a cacao hit but also knew I needed a protein boost to power me up, so this was the happy result.

4 good Tbsp black beans, rinsed
1 small ripe banana
1 heaped Tbsp peanut butter
1 heaped Tbsp cacao (or good cocoa)
2 Tbsp ground almonds
3/4 cup milk of choice – I used 1/2 rice, 1/2 coconut

Blitz until smooth & creamy. Optional: top with a few spoonfuls of chia pudding (mine is simply chia seeds soaked in rice/coconut milk with a dash of maple & vanilla extract)
